Jade: Bitemysalad

It's Friday evening, the end of 12-hour days on the wards; no more holding your pee because your consultant hasn't peed and peeing without your consultant's permission is like eating with a nun without saying grace; no more wistfully watching the patients' lunches being sent to them while thinking ''it's not bloddy fair, you're fat and your gallstones are the reason I'm low on sugar and you get lunch in bed:(''.......no more..for 2 days anyway. And what's the perfect way to wind down you ask?
Deep fried calamari salad with honey mustard dressing.

Crisp leaves of little gem lettuce; sweet vine tomatoes; perfect hard boiled eggs, steeped in hot hot water for exactly 10 minutes, topped with beautifully crunchy deep fried calamari....and the final flourish- a generous drizzle (I say drizzle, but what i really mean is heaped spoonfuls) of homemade honey mustard dressing........take in the gorgeous colours.....now take a bite.

Divine.....

Honey mustard dressing:
2 heaped tablespoons good quality mayo
1 and half tbsp dijon mustard
1 tbsp olive oil
1 tbsp honey [or more, if you like it sweet]
lemon juice/ rice wine vinegar
freshly cracked black pepper
Whisk and chill.
Not forgetting the secret to a light, crunchy coating for the calamari, which sounds so much posher than squid...seriously: Squid salad, sotong salad...now say deep fried calamari salad. I rest my case. But yes, the secret is seasoned corn flour: teaspoon of salt, healthy shake of pepper, 4 heaped tablespoons of corn flour and sizzling hot oil.
